Combine soup and sour cream in bowl. Prepare stuffing mix according to package directions, using 1 1/2 cups water. Add zucchini, ground beef and carrots. In saucepan cook carrots and onions in 4 tablespoons butter until tender. Remove from heat.
Preheat the oven to 350 degrees. Fry carrots and onions in 4 tablespoons of butter.
Spread zucchini mixture in an even layer in a 9 x 13 inch glass pan sprayed with nonstick cooking spray.
Gently stir in zucchini and turn into 1-1/2 quart casserole. Remove from heat and stir in 1 1/2 cups croutons, soup and sour cream.
In the same bowl as the stuffing, add the remaining ingredients – zucchini, turkey, onion, soup, carrot, and sour cream.
