My favorite way to eat this oven roasted frozen broccoli is alongside my Easy Crock Pot Baked Ziti (pictured below). Or, hey, leave the veggie out altogether—this dish was designed to be flexible and delicious with whatever you have on hand. Remove from the oven and sprinkle on parmesan cheese, or nutritional yeast if you want to keep it dairy free. We opted to jazz the dish up with the addition of broccoli florets, but if you have a different frozen green veggie kicking around the freezer, like sweet peas, or even a bag of spinach in the crisper, feel free to use what you’ve got instead. This combo was heavenly! So good and ridiculously easy! We made a few modifications- used broccoli and cauliflower, added toasted almonds, and used about 1 1/2 cups of parmesan just because we love cheese. If you need a quick and easy veggie go to dish, this is the answer!
