Today I’m remaking Granny’s spaghetti salad with a healthy EBF twist — zucchini noodles instead of spaghetti noodles and a homemade Italian dressing instead of the bottled stuff. First, some background. If you know me and have ever asked me what you should cook, I’ve probably told you to make pasta with zucchini (“pasta e zucchini” in Italian). Basically, this salad covers everything! This healthy zucchini noodle salad has all the flavors you love in a classic Mediterranean pasta salad but we've swapped in zoodles for wheat pasta, which makes the salad lighter, lower in carbs and gluten-free.
