Leftover mashed potatoes work really well in this recipe, but you can always make them from scratch specifically for filling. Pierogi can be filled with various fillings, but tradition is a potato and cheese curd mixture.

I ended up using 4 small/medium potatoes to make the mashed potatoes. I added 8-12 ounces cheddar (we like it cheesy) and 2-3 ounces cream cheese to the mashed potatoes… They are a staple at many of my families’ holiday gatherings and, seriously, make all the feelings well up inside whenever we serve them.
