But it's also wonderful as a salad if you give it a three-minute massage. Kale is a hearty winter green that holds up well in soups and stews.



Made with a 16 bean soup mix (if yours comes with a flavor packet you'll want to discard it) plus smoked ham, vegetables, fresh herbs and kale. The flavor was good -- lots of suggestions of fresh kale -- but there wasn't quite enough crunch.

1/2 tsp kosher salt.
You'll want to soak the beans overnight, then discard the water the next day before cooking.

1 bunch kale, preferably dinasaur (lacinato), ribs removed and discarded (6 oz total without ribs) 1 tbsp extra-virgin olive oil.
